A powerful tornado swept through northwest Houston Monday afternoon, leaving significant damage across neighborhoods like Memorial Northwest.

 

Over 100 homes were damaged, most heavily near Cypress and Klein, as residents watched roofs ripped off and debris scattered into the streets.

 

Fortunately, no injuries have been reported, though several homes, especially along the 8000 block of Summer Grove Circle in Klein, suffered major structural impact.

 

A residential fire at Spring Cypress and Doerre Road was believed to be caused by lightning striking during the storm.

 

The Houston Fire Department quickly deployed teams to clear fallen trees and debris, urging the public to steer clear of affected zones so emergency responders can work safely.

 

Officials stress staying alert to weather updates, checking on neighbors with special needs, and reporting hazards to local services as recovery efforts begin.

Cook Up a Cranberry Treat...

Apple and pumpkin are a couple of fruity favorites, but cranberry is another common ingredient that can be used to make a big statement. Mixed with walnuts, white chocolate chips and cake mix, these Cranberry Bars will leave family and friends begging for more

 

Cranberry Bars

 

Ingredients

 
  • 1 box white or yellow cake mix
  • 2 eggs
  • 1 stick melted butter
  • 1 1/2 cups dried cranberries
  • 1 1/2 cups chopped walnuts
  • 2 cups chopped white chocolate chips divided
 

Instructions

 
  • Heat oven to 350 F.
  • Mix cake mix, eggs, butter, cranberries, walnuts and 1 cup white chocolate chips. Spread into 7-by-11-inch baking dish and bake 35-40 minutes until toothpick inserted in center comes out clean.
  • Let cool then melt remaining white chocolate chips and drizzle over bars.

Pumpkin Pie

Servings 8
Prep Time 15 minutes
Cook Time 50 minutes

Ingredients

 
  • 1 pie crust store-bought or homemade, at room temperature
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 can Green Giant 100% Pure Pumpkin 15 ounces
  • 3/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

 

Instructions

 
  • Roll out dough to 2 inches larger than pie dish. Gently press dough into dish until it lines bottom and sides. Trim dough to within 1/2 inch of dish edge. Fold edges underneath themselves, creating thick 1/4-inch border. Crimp edges with fingers. Refrigerate. Preheat oven to 375 F.
  • In large bowl, whisk eggs and sugars until smooth. Add pumpkin, cream, vanilla, cinnamon, ginger, nutmeg and salt. Stir until well blended.

Bacon Jalapeno Popper Cheeseballs

Servings 8 cheeseballs

Ingredients

 
  • 1 package cream cheese 8 ounces
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon cumin
  • 1/4 teaspoon onion powder
  • 1 tablespoon canned diced jalapeno peppers, drained
  • 2 tablespoons minced fresh jalapeno divided
  • 1/2 cup green onions chopped, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 slices about 2/3 cup cooked bacon, chopped, divided
  • 1/4 cup chopped fresh parsley
  • Celery Sticks
  • Dandy Radish Coins

 

Instructions

 
  • To make cheeseballs: Combine cream cheese, cheddar cheese, cumin, onion powder, canned jalapenos, 1 tablespoon fresh jalapenos, 1/4 cup green onions, salt, pepper and 1/3 cup chopped bacon. Using spoon or rubber spatula, mix thoroughly.
  • To make coating: In small bowl or plate, combine remaining green onion (green parts only), parsley, remaining fresh jalapenos and remaining bacon.
  • Using 2-ounce ice cream scoop, portion eight equal balls, placing in shallow bowl to roll and cover with coating.
  • Serve with celery sticks and radish coins.

Deviled Eggs and Bacon

Servings 10

Ingredients

 
  • 12 eggs hard-boiled and peeled
  • 2 tablespoons mayonnaise
  • 1 tablespoon prepared yellow mustard
  • 2 tablespoons sour cream
  • 2 tablespoons whipping cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 green onions roughly chopped
  • 2 stalks Celery julienned
  • 1 package Radish Ministicks
  • 4 slices bacon cooked to crisp and cut into 24 pieces
  • ground Aleppo pepper or paprika
  • sea salt flakes
 

Instructions

 
  • Slice eggs in half lengthwise. Remove yolks and place in food processor bowl. Add mayonnaise, mustard, sour cream, whipping cream, salt, pepper and green onions. Mix until smooth, scraping down sides between pulses. Remove from food processor and place mixture in piping bag fitted with star tip.
  • Pipe filling into each egg white half. Display filled eggs on platter before applying toppings.
  • To prepare celery, place in water to curl cut celery. Set aside leaves for garnish.
  • Place celery curls, radish sticks and crispy bacon on top of each egg. Sprinkle with Aleppo pepper and sea salt. Garnish with celery leaves, if desired.

Stuffed Boneless Pork Loin Roast

Servings 6
Prep Time 40 minutes
Cook Time 1 hour 35 minutes

Ingredients

 
  • 1 Natural boneless pork roast 3-4 pounds
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1/2 cup diced onions
  • 2 large eggs
  • 1/2 cup milk
  • salt to taste
  • pepper to taste
  • 1 tablespoon fresh sage
  • 1 tablespoon fresh rosemary
  • 2 cups cubed fresh bread crust removed
  • 1 apple diced
  • gravy for serving
 

Instructions

 
  • Preheat oven to 375 F.
  • Butterfly roast.
  • In large skillet over medium-high heat, heat oil and butter. Add celery, carrots and onions; cook until softened, about 5 minutes.
  • While vegetables are cooking, whisk eggs; milk; salt, to taste; and pepper, to taste, until well combined. Mince sage and rosemary.
  • In large bowl, combine bread, vegetable mixture, liquid ingredients, apples, sage and rosemary. Gently toss until bread absorbs most of the liquid.
  • Cut three pieces of butcher’s twine about 4 inches longer than the longest side of butterflied roast. Lay string on cutting board horizontally and lay roast on top of string to cover.
  • Place half of the stuffing mixture onto butterflied pork loin and press down firmly. Roll roast up and tie with butcher’s twine to hold it together, taking care not to tie too tightly, and press any stuffing that comes loose back into ends of roast.
  • Place stuffed and tied roast, fat cap up, on rack over baking sheet. Season liberally with salt and pepper; roast until meat thermometer inserted into roast registers 140 F, 75-90 minutes.
  • Place remaining stuffing in a small ovenproof casserole dish and cover with foil. After roasting 30 minutes, place extra stuffing in oven to cook alongside roast.
  • Remove foil from extra stuffing and remove roast from oven. Let rest for 10 minutes then remove the extra stuffing from oven.
  • Cut twine from roast and discard. Cut roast into six thick slices, taking care not to lose stuffing. Serve with extra stuffing and gravy.
